A hands-on baking experience focused on crafting rustic, airy ciabatta with its signature open crumb and golden crust, alongside soft, pillowy burger buns perfect for gourmet sandwiches and burgers.
What to expect from this workshop:
- How to mix, hydrate, and develop high hydration ciabatta dough for its signature open crumb
- Techniques for proper stretch and fold, fermentation, and shaping of rustic ciabatta loaves
- How to create soft, enriched dough for fluffy, tender burger buns
- Shaping methods for achieving uniform, bakery quality buns with smooth tops
- Baking techniques for both crusty artisan bread and soft rolls, including steam and temperature control
- Tips for flavor variations, toppings, and adapting recipes for home ovens

About the instructor Kamela Khan:
Kamela gained her baking skills from many international culinary institutes like ICCA Dubai, Squires Kitchen UK, Wilton USA, PME UK, Silikomart Italy, and International Association for Flower Cake Designers (IKAFCD). She joined our Dubai team in 2013 as a cake decorator and expanded her teaching portfolio at Tavola to include baking and cake decoration workshops.
