A hands-on masterclass focused on the Italian meringue method, where participants learn to create perfectly smooth, crisp shell macarons with chewy centers, vibrant fillings, and professional quality finishes inspired by classic Italian technique.

What to expect from this workshop:

  • How to make stable Italian meringue using hot sugar syrup for smooth, consistent macaron shells
  • Proper macaronage technique to achieve the ideal batter texture and flow
  • Piping methods for creating uniform, round shells with even feet
  • Baking techniques to control rise, texture, and color
  • How to prepare a variety of classic fillings such as ganache, buttercream, or fruit curd
  • Tips for troubleshooting hollow shells, cracks, spreading, and other common macaron issues
  • Flavoring and coloring techniques for professional quality, customizable macarons

About the instructor Kamela Khan:
Kamela gained her baking skills from many international culinary institutes like ICCA Dubai, Squires Kitchen UK, Wilton USA, PME UK, Silikomart Italy, and International Association for Flower Cake Designers (IKAFCD). She joined our Dubai team in 2013 as a cake decorator and expanded her teaching portfolio at Tavola to include baking and cake decoration workshops.
